Two Noble Opens Above Sawyers Arms Tavern

The refined interiors are also a nod to the Asian infused cuisine, with renowned local interior designer Pip Johnson at the helm of Two Noble’s contemporary aesthetic.

Two Noble, Geelong’s newest fine dining experience, has opened on the top floor of Sawyers Arms Tavern.

Two Noble celebrates local food and wine in a vibrant exploration of South East Asian cuisine, and it’s an exciting addition to the burgeoning Geelong restaurant scene.

It is the latest offering from Sawyers Arms hotelier Paul Upham, who previously transformed the Lorne Hotel into a restaurant destination with the introduction of Movida and Coda, prior to selling to Merivale.

“Two Noble complements Sawyers Arms Tavern with a differentiated restaurant experience under the one roof. We want to offer a really social, approachable fine dining experience.

I want people to sit down with friends and family with the confidence that it’s going to be relaxed, but also at the highest standard. Food, wine and service - just a really good experience
— Paul Upham, Hotelier

The Two Noble team assembles former MoVida and Coda alumni in Executive Chef Mario Tambajong and Restaurant Manager Adam Zelley. They join Executive Chef Jackson Hunt (ex Movida) who has transformed the Sawyers Arms menu downstairs.

Chef Mario’s menu is a culinary journey through Southeast Asia, with an emphasis on diverse textures, heightened flavours and shared dining

The Two Noble Menu

Expect sensorial overload with the signature house roasted duck dish with Cointreau hoisin (prepared in house over two weeks); crunch on crispy Barongarook pork with green papaya som tum; or be adventurous with the striploin steak with pineapple nuoc mam and crispy onion.

South East Asian Dining At Two Noble

Guests can expect a varied wine list, with the list of options by the glass changing weekly.

Restaurant Manager Adam says “I like to introduce people to new wines that they might not try on their own. Part of that is supporting local producers - the little guys putting in the work to deviate from the standard. So if people want to try just a glass of something different, we’re happy to pour it.”
